        Quest Cactus Pudding Cups (Earth Day Edition Recipe)

        Cheat on pudding with pudding. This classic dessert is cherished for its creamy texture and sweet, comforting flavors but what if we told you that your beloved pudding could also pack a powerful protein punch? For Earth Day & beyond, enter the realm of Quest Pudding Cups, the perfect snack for anyone looking to boost their protein intake without sacrificing taste or indulgence. Yes, those are cactuses. 🙂

        NUTRITIONAL INFO

        QUESTIFIED PUDDING CUPS (EARTH DAY EDITION)

        Yields: 10 servings |  Serving Size: 1/2 pudding cups

        Calories: 90  | Protein: 7g  | Fat: 4g | Net Carb: 10g

        Total Carb: 10g   | Sugar: <1g

        Ingredients

        QUESTIFIED PUDDING CUPS (EARTH DAY EDITION)

        Method

        1. In a bowl of a stand mixer, beat together the milk and protein powder.
        2. Add in the pudding mix and beat on low-medium speed for 5 minutes and the pudding has thickened. Cover and chill.
        3. Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
        4. Unwrap the Quest Bars and place them beside each other on a piece of parchment paper.
        5. Microwave for 10 seconds and then cover with another piece of parchment paper and use a rolling pin to roll out into a thin disc.
        6. Use a cactus cookie cutter to cut out 5 cookies. Place them on the baking sheet along with any leftover scraps and bake for 6-7 minutes. Let cool.
        7. Melt the white chocolate and coconut oil together until smooth. Stir in the green food coloring.
        8. Dip each cactus in the white chocolate. Chill until chocolate is solid.
        9. Divide the pudding between 5 small bowls. Crumble the cookie scraps over each pudding bowl and top with a cookie cactus. Serve.
